Save a few minutes at the end of the day to do some mental math. Have the students get out a pencil and some paper and tell them to put on their best listening ears. Set the timer for one minute. Say a number of math problems outloud, pausing only a second or two between each one. The kids write their answers on the paper. WHen the timer goes off, read off the answers and give a prize to whoever gets the most correct.
